I'm locked with a lock-right in the rear, works great for me. If ylu lock the front you lock the front you will up the chance of broken parts, a limited slip would give you more lee room for proken pars as they will slip more say if one tire is jammed in a rock at full lock, with a locker you stand a great chance of broken a outer shaft or u joint. A limited slip would over power the clutches and just slip.

I have a 2001 Tahoe and I want to put Rancho 4 inch lift shocks on it. Is there anything else I need to install along with the new suspension? (I.e. steering parts, torsion bars, etc)

Ok so it's best to just have the rear locked?
Does it matter which axle goes to the front or rear? Meaning can I buy two ford d60's from Craigslist and they'll both fit?

Yes it matters, one is set up for steering an one is not. The best ones for the rear are out of late 70's Fords, just be careful on the early ones that are like19 spline axles. I prefer to have mine locked in the rear only, I also do not like broken parts.
