So because I can't afford rims and need to get new rubber badly....I've decided to just get some beefy tires. They would be going on a 2002 Tahoe LT with the 16" rims. I want to run the biggest tire I can safely run without rubbing issues. including in the snow. Its got to be an all season and I am not looking for off road mudding tires.

Anyone have any suggestions?

The BIGGEST TIRE you can run without rubbing or compromising anything is going to be: 285/75/16

285 is the largest you would want to go, anything bigger will rub and look like sh*t. You will also experience poor tire wear with a tire that is too wide for the factory wheel unless you are gonna buy wheels as well. Nitto terra grapplers are probably the cheapest 285 you can get that will wear nice and give solid traction.

Is 75 really the largest I can go though for the sidewall?

Not unless you want to install a leveling kit and some coil spacers for the rear.
