I am trying to find out if changing from 265/60/17 to275/60/17 will have any negative impact on a 2007 Tahoe Police SSV?

None. The new tire will be a hair (10mm) wider, and a 1/2" taller. Perfectly within the vehicle's tolerance as far as wheel well and factory specs. Remember that your speedometer is tuned to your current 265/60/17, so you may notice a slight difference in speed (speedometer will read slower than what your actually traveling.)

I can't imagine it would be all that much then for 5mm difference.

You should also be able to do a 265/65 R17 or a 265/70 R17. Will just have a higher sidewall and larger overall circumference. Aftermarket programmers are available that will let you adjust the speedo calibration.
