what's the importance of changing fluid in the transfer case and differential?

Most fluids that have a maintenance change interval are ones with addtitive packages in them (such as oil, rad coolant, trans fluid, etc) that get used up over the time interval specified by the change schedule.

They also can break down, and hold a lot of crap in suspension.

You seem to have done OK getting to 142K miles with you Tahoe. What have you had to do/replace/fix on it over that period?

Just wondering as my '00 5.3L just hit 100K miles and aside from normal fluid changes and maintenance, have not replaced anything on it yet (plugs, waterpump, etc.). Did belts at 60K per the schedule though.

Was just wondering what to expect over the next 42K miles.

Contamination and fluid break down are the two big reasons.

Contamination (little specs of metal, dirt and debris) is minimal when compared to fluid break down. After thousands of heating and cooling cycles, the fluids (oils) ability to lubricate is substantially reduced. Less lubrication efficiency means more friction which means more heat, more drag, less MPG and greater chance of failure.
