How do I do that? There is this little black 'nub' with a pin sticking through it that is in the center of the black plastic 'wing nut'. How do i remove it so i can change my flat tire?

Remove your jack, and jack accessories. Open the box of accessories, and remove the ratcheting handle, and the wrench (looks like a socket on one end, and a flat screwdriver on the other end) Slide the ratcheting handle (with the side reading "down" towards you-I THINK) around the insert the screwdriver looking end of the wrench then slide the screwdriver end into the hole in your rear bumper- this lines up with a tube on the other side of the bumper and turn the ratchet. It will slowly winch down. Then you can move the toggle through the center hole of the wheel, and it will be free
