I want to remove the pinstripe that runs along the sides of my tahoe. What would be the best method without ruining the paint?

if they are vinyl pinstripes I know they made a pinstripe remover tool made by 3M and some other brands for air grinders. Seen people use them in drills too but took a lot longer.

You can also try pealing it up by your fingers and just pulling it off, and follow up with something like a "goof off" or "goo gone" to remove the left over adhesives. This is how I did mine, and my moldings too.
