I've tried googling for the answers, but what I found was both confusing and conflicting...

For the years I'm looking at, 2007-2011, what really do you get with a Z71 package that you can't get as options on other models? Can I simply buy a Tahoe with G80 locker, add skid plates, then swap out the springs/shocks and be non-cosmetically identical to a Z71 or are there other things like TC or axle gearing that are also different? I've seen things that hinted at differences in the bumper and fender flares, if true is this just cosmetic or is there a difference in approach angle or tire clearance?

With emphasis on off roading, is there anything else I should be aware of? Year to year changes, options that I'd want to make sure I get or that should be avoided?

wikipedia has good info on it usually. For the specifics your local dealer should have the info you need.

wikipedia doesn't say anything about the differences with a Z71 in the 2007+ years, major or subtle. I don't trust dealers either, they tried to tell me there is zero difference in fender flares or bumpers (something I've been able to figure out are different). I did test drive my first Tahoe a few days ago, a non-Z71 LT.

I'm a bit surprised by the lack of responses. Maybe this has been hashed to death and I just couldn't find it (try searching for Z71 here)? Maybe it's too complicated, year dependent, etc. In any event, I've decided that I am going to buy a Tahoe, and it will be a Z71. If nothing else, I like the Z71 bumpers better and I want a firmer suspension than the LT I drove.
