New motor - trying to get things settled

So now that the motor is in I am just working out a few little problems. First were just leaky hoses to tighten. Now the real problem I have is the acceleration/idle. When I go to accelerate off the line there is a lot of sluggishness through to about 15mph then accelerates like normal. When I brake coming up to a light the engine drops idle to about 500rpm and almost wants to give up. Any suggestions?

Also - how much trans fluid does the thing hold? I leaked out quite a bit from the torque converter pulling the motor and have put back about 2 quarts but reading the stick is tough (hard to tell where the line is)

First, what year do you have?

Second to help read an oil level that is hard I would run up to temp, and then dip the dipstick in the washer fluid resivoir and whip it in the air a tad, restick and reread.

Check the EGR valve.

Check MAP and TPS sensors. (parts store can test MAP, TPS is easy to test with an ohmmeter.)

Check base timing.
