I have a 2003 Tahoe 5.3 that starts and idles fine but after I drive it for a little bit it becomes sluggish when I give it gas and if I floor it the truck will shift down but won't accelerate then it stumbles and stalls. It will start right back up once I turn the ignition off and run fine for a bit before it starts acting up again.

I've replaced the throttle position sensor, cam and crank sensors, Intake manifold and gaskets, coolant temp sensor, MAF sensor, map sensor, and knock sensor with harness. it also has a newer fuel filter on it. My fuel pressure gauge bounces between 50 and 40 psi with it running and with it off it sits and just under 50 psi. this issue has me pretty stumped at the moment and need some help...

Fuel pressure sounds too low, should be closer to 60 when running. Does it leak down or hold at 50 when shutoff? I believe that year has the fuel pressure regulator mounted on the fuel rail, have you ever replaced it?

Just checked it again and with the ignition on it sits at 46 psi and loses pressure very slowly. With it running it bounces between 40 and 42 psi. I didn't replace the fuel pressure regulator and will this week.

I had a similar situation with my 00 Silverado. It turned out to be the FPR like Jeff said. I think it was something like $52 and very easy to change.
Hope it fixes your problem.
